1. Bath — best for spa + couples

Bath is the answer for a "nice weekend" without trying too hard. Roman Baths, Thermae Bath Spa (open until 22:00), Georgian terraces, the Jane Austen Centre, and seriously good food. Stay near Pulteney Bridge and walk everywhere.
